Chef’s Series Part Sept
Chef Colby Janowitz is, in many ways, part of how Troubadour came to be. A fellow Singlethread alum and dear friend of our team, Colby played an important role in opening this space, shaping the bread program, and helping bring Le Dîner to life.
In December 2025, Colby and his wife, Meagan, who helped open Quail & Condor, traveled back home to Healdsburg from Virginia to bring the flavors of their pop-up concept, Mycelia, to the Troubadour kitchen. Their work beautifully weaves locally sourced ingredients, Japanese-inspired techniques, and a hospitality rooted in connection and community.
It was a homecoming in every sense.
